Nathan Anthony has two great cookbooks for those looking to prepare delectable and healthy meals at home: The Healthy Slow Cooker Book and The Healthy Air Fryer Book.
Both books provide a broad variety of straightforward, wholesome recipes that are easy to follow.
Nathan Anthony offers ideas for flavourful and nutritious slow-cooker meals in “The Healthy Slow Cooker Book.”
The recipes are ideal for busy people or families who want to have a hot, wholesome dinner waiting for them when they get home from a long day. They include everything from soups and stews to casseroles and roasts.
The emphasis of “The Healthy Air Fryer Book,” in contrast, is on healthier variations of well-known fried dishes. Anthony demonstrates to readers how to make delectable, crispy meals using an air fryer that are much healthier than conventional fried foods.

Below are three free recipes that we have been allowed to share on this site, we hope you enjoy them as much as we do.

Fish Tacos

Ingredients

600g cod fillets
300ml water
1 egg
180g plain flour
1 tsp baking powder
1 tsp lemon pepper
Seasoning or lemon zest
Salt and pepper, to taste

Sauce

6 tbsp light mayo
3 tbsp Greek yogurt
2 tbsp sriracha
Juice of 1 lime
1 tsp paprika
1 tsp garlic powder

How to serve

Soft or hard-shell tacos
Lettuce
Tomatoes
Red onion
Coriander
Guacamole

Fish Tacos

How to Make

Season the cod fillets with salt and pepper. In a bowl, beat the water, egg, flour, baking powder and lemon flavouring.
Coat the fish in the batter, then cook in a preheated air fryer at 200°C for 14–16 minutes – it’s important that the air fryer is piping hot as the fish goes in. Check after 10 minutes to ensure nothing burns – mine usually take 15 minutes.
While the fish is frying, combine all the sauce ingredients in a bowl and prep your filling ingredients.
Assemble the tacos with the fish, salad and guacamole and top with the sauce.

French Onion Soup

Ingredients

10 onions, sliced
100g low-fat butter
1 tbsp Italian herb seasoning
2 garlic cloves, crushed
1 bay leaf
2 tbsp brown sugar
200ml white wine
900ml vegetable or
Beef stock
1 tsp Worcestershire sauce
Slices of baguette
120g gruyère cheese, grated
Salt and pepper, to taste

French Onion Soup


How to Make

Place the onions, butter, Italian seasoning, garlic, bay leaf, sugar and wine in the slow cooker, stir and season to taste.
Cook on high for 10 hours. Add the stock and Worcestershire sauce and stir well.
Arrange the slices of bread on top of the soup and sprinkle with the grated cheese.
Cook under a preheated grill for 8–10 minutes until golden brown. If your slow cooker pot is not ovenproof, transfer the soup to an ovenproof dish before topping with the bread and cheese.

Peri-Peri Styled Chicken

Ingredients

1 tbsp dried oregano
juice of 1 lemon
juice of 2 limes, plus 1 slice
1 tbsp paprika
1 tsp mild chilli powder
2 tbsp olive oil
3 garlic cloves, crushed
1 whole chicken
5 corn on the cob
1 bay leaf
salt and pepper, to taste

Peri-Peri Styled Chicken

How to Make

Place the oregano, lemon and lime juice, paprika, chilli powder, oil and garlic in a large mixing bowl, season to taste and stir to combine. Add the chicken and corn and turn to coat in the marinade.
Pop the bay leaf and lime slice inside the chicken and arrange the chicken and corn in the slow cooker. Cook on high for 4–5 hours or low for eight hours then place the slow cooker pot without the lid in a preheated oven at 200°C for 10 minutes until the skin is crisp. If your slow cooker pot is not ovenproof, transfer the chicken and corn to an ovenproof dish.
The chicken goes in the oven at the end to crisp up the skin, but it could be cooked in the oven from the start if you prefer – just coat the meat in the marinade and roast as normal.
