Sydney, Oct 2: A new boutique bakery, Martha’s, has opened on Great North Road in the waterside suburb of Wareemba, aiming to attract pastry lovers with a Mediterranean-inspired menu and specialty coffee.
Martha’s serves a mix of sweet and savoury offerings “elevated through a Mediterranean lens,” with classics such as buttery croissants, cinnamon scrolls, and custard tart with silky crème anglaise alongside signatures like a twice-baked almond croissant infused with cardamom and rosewater (mawared), a za’atar knot with tahini dipping sauce, and ’nduja eggplant & basil.
The sweets lineup spans olive oil citrus cake, double chocolate brownies, and cookies including Earl Grey black sesame and brown butter choc chip with sea salt. Sandwiches are built on house rolls, sourdough, and rosemary focaccia, featuring fillings such as spiced kafta lamb with caponata, tzatziki and rocket, roast chicken with tomato, avocado smash and butter lettuce, and a salami–mortadella–pesto–stracciatella “counter stack.”
Drinks include a specialty blend barista menu, an aromatic nutmeg citrus cold brew, and coffee alternatives like house-made blackberry matcha and a maple brown butter iced oat latte on tap.
“Our menu is about staying true to our roots and identity, but also having fun with the classics that people know and love,” says Paris Nassif, Martha’s owner. “With the bakery, we wanted to create a place where people could slow down, savour something, and feel that sense of renewal — a place to rise again each morning,” says Nassif.
Hours & Location: Martha’s is open Wednesday to Sunday, 6am–4pm, at 312 Great North Road, Wareemba. The 20-seat café offers banquettes, curb-side tables, a standing espresso bar, and takeaway.
