Sydney, March 17: Sydney’s most exciting new food and market precinct, Hay St Market at Paddy’s, will officially open its doors on Wednesday, 26 March 2025, bringing new life and energy to the heart of Haymarket.
Five years in the making, Hay St Market at Paddy’s reimagines one of Sydney’s most iconic markets for a modern audience. Taking inspiration from renowned international destinations—London’s Borough Market, Barcelona’s La Boqueria, and Singapore’s Lau Pa Sat—this vibrant new precinct blends market shopping with day-to-night casual dining, all under one roof.
The fully licensed venue features 47 traders and over 25 cuisines, combining fresh produce, floristry, hawker-style eats, curated bars, and specialty retail. Visitors can expect a central market hall experience, catering to both those after a quick bite and those looking to enjoy a leisurely dining experience.
