Sydney, Jan 14: Located in the vibrant heart of Merrylands, IFTAR introduces a bold, fresh take on Middle Eastern cuisine. Led by Jeremy Agha, the restaurant brings together rich, authentic flavors with modern influences, offering a dining experience that pays homage to tradition while embracing innovation.
The name IFTAR, meaning “break-fast” in Arabic, holds a personal significance for Agha, serving as a tribute to his mother, Rita, whose cherished recipes form the foundation of the menu.
Each dish reflects a deep connection to family heritage, aiming to honour Rita’s legacy while redefining Middle Eastern dining.
“The hidden meaning is, IFTAR can’t be spelt without the letters of her name – there’s no IFTAR without Mum. It’s as much her story as it is mine,” Agha shares. This heartfelt tribute creates a warm, welcoming atmosphere, making every guest feel like part of the family.
The thoughtfully curated menu is designed for sharing, with an array of small plates and hearty mains reflecting the communal spirit of Middle Eastern dining. Signature dishes include spiced manoush, batata harra, lamb shawarma tacos, and eggplant fatteh, alongside modern innovations like wagyu kofta dumplings.
A standout feature of the menu is the woodfired sourdough bread, a treasured family recipe that has been passed down through generations.
“Middle Eastern dining is about more than just food; it’s about the experience of gathering with loved ones, sharing stories, and enjoying flavours together. At IFTAR, we want every guest to feel that warmth and generosity, as though they’ve been welcomed into our home,” says Agha.
Agha’s journey into hospitality began at his family’s Lebanese bakery, where he developed a passion for food and community. This passion is evident in IFTAR’s approach, blending traditional recipes with contemporary techniques to create an elevated dining experience. By balancing authenticity with fresh ideas, the venue offers something unique to Sydney’s evolving dining scene.

IFTAR will officially open its doors on Saturday, January 18th, inviting guests to experience a new era of Middle Eastern dining.
