I recently had the pleasure of trying the latest collaboration between Bulla Ice Cream and renowned pastry chef Kirsten Tibballs, and I must say, it was a delightful experience.
In the past, I found Bulla’s ice cream to be a bit lighter than I preferred, lacking the rich creaminess that many famous brands are known for.
However, this new collaboration has completely changed my perception.

Berry Rebellion Tart: A Pink and Berry-Filled Chocolate Dream.

The Tibballs dessert-inspired ice cream sticks are a game-changer.
They hit supermarket shelves on October 16th and are the result of a partnership with one of Australia’s most beloved pastry chefs, Tibballs.
These new ice cream creations are sophisticated enough to impress even the most discerning foodies while maintaining that fun factor that kids love in an ice cream stick.
The range includes three fantastic flavours, all inspired by Tibballs’ famous sweet treats.
The Lemon Meringue Tart flavour is a swirl of meringue-flavoured ice cream and lemon curd, covered in creamy chocolate with crunchy blonde biscuit pieces, and dyed lemon yellow in tribute to Tibballs’ spectacular Lemon Meringue Tart.

Passionfruit Panna Cotta: Creamy Vanilla with a Passionfruit Twist.


The Passionfruit Panna Cotta flavour combines creamy vanilla ice cream and passionfruit sauce with a hint of mango sweetness, covered in creamy chocolate with a dash of passionfruit essence, and dyed sun yellow to pay homage to Tibballs’ vibrant dessert.
Lastly, the Berry Rebellion Tart flavour features creamy strawberry and vanilla ice cream marbled with a strawberry sauce, reminiscent of the marbled chocolate coating of Tibballs’ Berry Rebellion Tart.
It’s covered in creamy chocolate, dyed pastel pink, and adorned with crunchy blonde biscuit pieces.
I had the pleasure of trying all three flavours, and they were simply exquisite.

If I had to choose a favourite, it would undoubtedly be the Berry Rebellion Tart.
This ice cream tasted like a chocolate dream, but its delightful pink hue and the real burst of berry flavour made it a unique and unforgettable treat.
What’s particularly impressive about the Tibballs collection is that it continues the Bulla tradition of using fresh Australian milk, cream, and free-range egg yolk.
Plus, Tibballs’ own incredible recipes have taken the ice cream experience to a whole new level.
If you’re eager to give these delectable treats a try, you won’t have to wait too long.
