Another Swanky Resto Launches

Sydney, Oct 29: Sydney’s food scene has just got a tad bit cooler.
This is because the team behind the award-winning cocktail and spirits venue, Burrow Bar, have launched an authentic Vietnamese Restaurant, Cash Only Diner in the heart of Sydney CBD.
Cash Only Diner is a new chapter in Burrow Bar operators Chau Tran and Bryce McDonough’s hospitality journey, and is an ode to Chau’s family heritage and the regional dishes from Hue, Vietnam
This year, Burrow Bar was a finalist for Australian Bartender Magazine’s Bar of the Year, Bar Team of the Year and Small Bar of the Year.
Operators Chau Tran and Bryce McDonough have a reputable history in hospitality, with Tran winning Host of the Year at the 2021 Bartender Magazine Awards as well as being listed in DrinksWorld’s Top 25 Bartenders, and McDonough co-owning popular hospitality spot, Neighbourhood in Bondi.
Now, Tran and McDonough are bringing their years of expertise to Cash Only Diner, serving authentic Vietnamese food that is new to Sydney’s restaurant scene.

Focusing on the regional area of Hue is a large part of what makes this new venue so unique, because unlike most Vietnamese restaurants in Australia you won’t find pho or banh mi at Cash Only Diner, and instead you’ll find a style of food that hasn’t been done locally before with a desire to not shy away from very authentic accoutrements.
The menu is inspired by Chau’s mother’s traditional cooking learnt from a French finishing school in Hue, and carefully crafted by a team of chefs with pedigree from Rockpool, Spice Temple and Quay, with signature dishes including  Bún bò Huế (an aromatic and layered beef soup), Cơm Hến (baby clam rice with pour over broth), Cá Kho Tộ (caramelised and braised clay pot fish) and Chả Cá Thăng Long (Tumeric and Dill fish served whole).

“Our team has worked for months to create contemporary versions of dishes that have decades of tradition behind them. We want this to be a place where people who love authentic Vietnamese food come to, but we also want to share these new flavours with all Sydney foodies,” Chau said at the launch.
The light, sun-filled restaurant on the corner of Clarence and Barrack Streets is a stark contrast to the adjoining bar beneath it. Cash Only Restaurant boasts a bright, open and modern setting, and downstairs Burrow Bar has more sultry vibes and is fitted with retro vintage décor.
